Lemon White Balsamic Salad Dressing

This is one of my favorite dressings! It's bright, oil-free lemon–white balsamic dressing with Dijon and a touch of maple for balance. A quick shake together, it adds zesty, lightly sweet flavor to salads, bowls, and veggies.

Ingredients
  

  • 3 Tbsp fresh lemon juice
  • 1 Tbsp white balsamic vinegar
  • 1 tsp Dijon mustard
  • 1 –2 tsp maple syrup to balance
  • 1 small garlic clove minced
  • Pinch sea salt
  • Fresh cracked black pepper
  • Optional: zest of 1/2 orange or 1/2 lemon

Method
 

  1. Add everything to a small jar with a lid.
  2. Shake hard for 10–15 seconds (or whisk until smooth).
  3. Too sharp? Add ½ tsp maple.
  4. Not bright enough? Add a little more lemon.
  5. Want more “zip”? Add extra black pepper or a touch more Dijon.

Notes

Note: Store in the fridge up to 4 days. Shake again before serving.
Note: I use this citrus squeezer to get the most juice out of my lemons.
