Ingredients
  

  • 2 cups quick oats
  • 3 apples chopped small
  • 1 cup unsweetened nondairy milk
  • 1/2 cup whole wheat flour if gluten free, use oat flour
  • 1/2 cup dates finely chopped
  • 1/4 cup pure maple syrup
  • 3 tbsp water
  • 2 tbsp chopped walnuts toasted
  • 1 tbsp cinnamon or apple pie spice
  • 1 tbsp flaxseed meal
  • 1 tsp vanilla extract
  • ¼ teaspoon ground ginger
  • Dash sea salt

Method
 

  1. Preheat oven 350 degrees.
  2. Add paper or silicon cups to cupcake pan.
  3. Mix water and flaxseed meal and set aside five minutes to let set.
  4. Combine all ingredients and mix just enough.
  5. Fold in flaxmeal and water (“flegg”).
  6. Fill cupcake cups 2/3 full.
  7. Bake 18-22 minutes
  8. Cool in the pan 10 minutes.

Notes

Protein Note: To make these protein oatmeal bake, add one scoop of plant-based protein powder and 1/4 cup applesauce to the mix. Start checking them at 18 minutes with a toothpick, which should be clean of batter. The calorie count will go up roughly 10 calories per serving. 
Peanut Butter Note: Travis likes to add 1/4 cup of peanut butter to his. If you do this, no need to adjust other ingredients but note the calorie count will go up likely 20 more calories per serving and you’ll want to start checking for doneness around the 20-minute mark. 
Sweet Drizzle Note: If you want to make it just a bit more dessert like, drizzle a cashew-based caramel on top.
